My little den

It saddens me when I don’t have regular time to check in with the blogging world. I miss keeping up to date with postings from people I’ve followed for months. But then, when you only have a certain amount of time between sleeping and working, some things do tend to take priority, like seeing friends, doing laundry and cooking.

I’ve been doing a lot of cooking lately, and writing about it too. My new venture into writing a student lifestyle book is coming along wonderfully. It’s a subject I’m truly passionate about and I think that’s coming across as I write.

I would like to be more consistent with my posting and my activity within the blogging community too. I’m going to carve out two mornings a week where I can dedicate an hour at the library solely to The Domestic Storyteller. That should give me a chance to not upload the latest instalment, but also read and learn from others’ posts too.

As much as I miss consistent access to the internet, there is one huge upside. I do get more done. Instead of scrolling through webpages before work, I read more and write more. Instead of spending hours catching up on television programmes on various services, I can improve my little flat. After making cushions, I was ready for another project.

The dark wood coffee table was unwanted by my parents, who kindly brought it with them on their last visit. It was accompanied by sand paper, a pot of paint and two paint brushes. Armed with instructions from my knowledgeable father, I set to work on transforming this piece. It was the only dark-wood item in the flat and I much prefer it when things match.

IMG_0618 IMG_0620Whilst I had the sheet out and the paint brush wet, I thought I might as well cover up the faded wood of the stool too. It’s the perfect size for a bedside table for my chap to use.

Thanks to these cheap, personal touches, I really do feel like I’m home in my flat. It’s not much and it’s a bit shabby, but as a friend commented on seeing it for the first time; “You’ve done well here Rebecca.” I’m inclined to agree.

Fuel for the day

Monday is shopping day. It’s the day I trawl around several different shops in order to get the best prices for my weekly rations. I love it. Shopping is a wonderful hobby, it never feels like a chore to me. From my unscientific research, it seems to be that males do not like taking them time perusing a shop and its wares. It’s more of an in-out-get-out-as-fast-as-you-can sort of job. But me and a girlfriend spent an hour this morning hopping from one store to the next and it was glorious.

But as today was shopping day, I woke up this morning with a dilemma. No apples for muesli, no bananas for porridge, I can’t make toast in this kitchen and I certainly wasn’t going to use an egg for just one meal. I had been browsing Carolyn’s famous blog and decided to try out her recipe for Eggless Pancakes. They were divine.

As mine were made with g-f flour, they were not light and fluffy, but I do think the addition of a little bicarbonate of soda did help. They were quick to make, cheap, using few ingredients and tasted delicious drizzled with honey and served alongside a strong cup of tea.

It can be hard making supplies last the week, but when you get to the end of the week and there’s still goodies for breakfast, you know you’re doing ok.

We’re having a cook-up

Since being in my new space and getting used to the new amenities, I have only spent fleeting time in the kitchen. But on my first day off, I knew it was high time for some serious bulk cooking. I needed to fill the fridge and freezer for the busy week ahead. I love spending time over the stove, stirring pots and throwing in various ingredients. It uses less power, ensures that no fresh produce goes to waste and saves time in the long run. Let’s just say, things got pretty inventive . . .

IMG_0324  These were my lunches for the past couple of days. It’s a concoction of savoury rice, taco-spiced onion and red pepper, and tuna. Sounds odd, but seriously tasty.

Some times it’s necessary to have simple, cheap dinners occasionally so that I can afford really good meals at other times during the week. Although my supper on Thursday was simply mashed sweet potato and baked beans, it meant I had enough funds to buy necessary ingredients for a kickin’ chilli pot the next day.

I will keep bulk cooking because it is the best way to cook on the cheap. Although I did get a reduced loaf of gluten-free bread this week, so it’s sandwiches aplenty for now. Nice to get a bit of variation going on.
