Points and patchwork

Thank you all so much for your kind comments I received on my last post. They truly warmed my heart and feel proud of my achievements. I hope you don’t think of me as bold for saying so, but I am quite pleased with myself.

I have been employing my full arsenal of thrifty tactics this past week. Due to once-in-a-lifetime celebrations occurring this week, more money has been spent on extravagances than everyday items. I have no regrets. Sometime you must simply seize the moment and enjoy it for all its worth.

Nevertheless, I have been saving and making shortcuts where I can in order to save pennies. The main areas ripe for cutting back were (as always) my energy usage and my food bill. Luckily, I’ve not had to use much energy for cooking this week, as I was enjoying the leftovers from our Graduation banquet. I’ve made the most of every scrap of food, and had some truly delicious meals.

I have also received post from Mr Sainsbury’s this week, gifting me with bonus points vouchers. I know Sue from Our New Life in the Country was recently discussing the highs and lows of using supermarket vouchers. For me, I was yet to do my weekly shop and as the vouchers were for store cupboard staples (i.e. not junk), I deemed them acceptable to use. Plus, I only collect points from Sainsbury’s, not a variety of stores. By collecting as many points as I can during the good times, I have a safety net for when actual money is sparse.

In other Nectar points news, my incentive from Expedia came through a couple of days ago. I entered my Nectar card number at the checkout when we booked our holiday for Lisbon, and I’ve received 2000 points, the equivalent of £10. This, combined with the points earned from vouchers, means I have £12.50 on my card. This will make a notable difference to my food shopping as I count down the days until pay day.

I’ve been putting my make-do-and-mend spirit into action too this week, using some of my holiday time productively. I’ve made up three cosy cushions to brighten up my neglected sofa. The wicker creation came with the flat, but is dreadfully hard to sit on. The improvements I’ve made are certainly more to my taste. I had to pay £9.10 for the large cushions inserts, but the rest all came from my stash. My next project is to refurbish an old coffee table – for pennies of course. Good luck with all of your thrifty ventures this week.

We’re having a cook-up

Since being in my new space and getting used to the new amenities, I have only spent fleeting time in the kitchen. But on my first day off, I knew it was high time for some serious bulk cooking. I needed to fill the fridge and freezer for the busy week ahead. I love spending time over the stove, stirring pots and throwing in various ingredients. It uses less power, ensures that no fresh produce goes to waste and saves time in the long run. Let’s just say, things got pretty inventive . . .

IMG_0324  These were my lunches for the past couple of days. It’s a concoction of savoury rice, taco-spiced onion and red pepper, and tuna. Sounds odd, but seriously tasty.

Some times it’s necessary to have simple, cheap dinners occasionally so that I can afford really good meals at other times during the week. Although my supper on Thursday was simply mashed sweet potato and baked beans, it meant I had enough funds to buy necessary ingredients for a kickin’ chilli pot the next day.

I will keep bulk cooking because it is the best way to cook on the cheap. Although I did get a reduced loaf of gluten-free bread this week, so it’s sandwiches aplenty for now. Nice to get a bit of variation going on.

Priorities

After my research last week led me to new realms, such as vegetarianism and veganism, my taste buds were altered. I was experiencing major fruit cravings. The odd apple every so often wasn’t enough to quench my appetite. I needed a serious fruit kick.

I took some of my precious allowance to the produce section of the supermarket and filled my basket. Over the past week, I’ve dramatically increased my fresh fruit intake and my body has responded wonderfully. I have more energy and more readiness to go outside to run. My skin doesn’t look as pale as it once did. And after a day where fruit featured heavily, I felt satiated. This was something I had previously been struggling with; never quite feeling full.

I spent most of January surviving on whatever was cheap at the supermarket. I can see now that I wasn’t getting enough nutrients to remain healthy. I can’t go back to that, not after feeling such benefits. So, I’ve made a decision about increasing my budget. Dramatically. I have doubled my monthly budget to £200.

Of course, this will mean I won’t have a stash available to me after Uni. But, there will still be some left over. And I’ve realised that living now, and living healthily now, is a matter of high importance. My health should come before trying to save money. However, I’m not going to use my increased funds as an excuse to not be frugal. I’m still going to be hunting for bargains to the best of my ability. And this money is marked for fresh, healthy food. Not extras, like books and unnecessary clothes.

£50 a week is the sum I used to live on during first year. It feels apt that my finances have come full circle in this, my final semester at University. The relief I feel confirms to me that this is the right choice.
